Recipe for Fall: Southwestern Chicken Stew

INGREDIENTS
1-28 oz. can diced tomatoes
2 cups chicken broth
1 can black beans
1 can corn
3 stalks of celery (diced)
½ diced yellow onion
¼ cup jalapeno (no seeds)
1 tbsp minced garlic
1 tsp onion powder
1-2 tsp dried oregano
1 tsp chili powder
1 tsp cumin
1 tsp salt
2-4 oz. chicken breasts

Southwestern Chicken Stew

Pro tip: throw all of these ingredients in a slow cooker on a Sunday and have dinner for the week!

Directions: add everything to the slow cooker except the chicken. Mix well. Add
chicken breasts on top and cook on low for 8 hours. At around 7.5 hours, take
chicken breasts out and shred. Put back into the chili and mix.
● Add your favorite shredded cheese or sour cream on top.
● Garnish with your favorite herbs.
● Continue to season as needed!
