Simple Spring Salad

This is one of my favorite salads that I’ve made in a long time. It’s. Too. Simple!


Romaine (I buy heads of romaine and chop it up, takes a second longer but helps the lettuce to stay fresh I can shred it the way I like it.)

Cucumber

Red Pepper

Carrot (shredded, store bought, saves time!)

Tomato (diced)

I load it up with sea salt, pepper, and crushed red pepper. 

Throw a veggie burger on top or protein of choice and a half an avocado to keep it filling!

I also used Balsamic Glaze which sweetens up any meal. 

The whole lunch probably took about 10 minutes to throw together, you can even throw it in a tupperware and save it for later! 

I will definitely be making this again soon when I want a nice, healthy and light lunch but also want it packed with flavor!
